Butter Bean and Feta Casserole with Spinach

Serves 4

Preparation time 10 minutes Cooking time 30 minutes

400g tinned butter beans 200g young spinach 300g cherry tomatoes 100g feta cheese 2 garlic cloves 3 tbsp lemon juice 1 small onion 25g parsley 1 lemon 25g butter 3 tbsp olive oil 1 tbsp fresh chopped oregano


1. Preheat the oven to 180C. 2. Drain the butter beans and rinse, set aside. Finely chop the onion, heat 3 tbsp of olive oil and fry the onion until soft. Add 2 crushed garlic cloves, 3 tbsp of lemon juice, the chopped oregano and butter beans, fry for a further 2 minutes, season to taste then transfer to an oven dish. Finely chop 2 tbsp of parsley and stir into the beans. 3. Press in the cherry tomatoes and crumble the feta cheese over the top. Bake in the oven for 20 minutes. 4. When the beans are nearly ready make the spinach. Heat 1 tbsp of olive oil, add the spinach leaves and cook until they wilt. Season to taste. 5. Serve the beans with the spinach on the side with slices of bread and butter.
