Beef Stir Fry with Soba Noodles


Serves 4 Preparation time 15 minutes Cooking time 10 minutes


500g beef fillet 250g soba noodles 1 tbsp fresh coriander 1 tbsp fresh mint 150g mange tout 125g baby sweet corn 1 garlic clove 1 red chili pepper 30g peanuts crushed 1 lime (juice and zest) 1 tbsp honey 1 tbsp fish sauce 1 ½ tbsp light soya sauce 1 ½ tbsp sesame or olive oil


Method

1. Start by preparing the beef and vegetables. Finely slice the beef (0.5cm thick) trimming off any visible fat, set aside. Finely chop the mint and coriander and crush the garlic. Remove any rough edges from the mange tout and slice the sweet corn into 1cm thick slices. Finely chop the chilli discarding the seeds. 2. In a small bowl mix together the fish sauce, garlic, soya sauce, chili, lime juice, lime zest and honey. 3. Bring to the boil a large saucepan of water, add the noodles and gently simmer for 5 minutes. 4. While the noodles are cooking, in a large frying pan or wok heat the oil, add the beef and stir-fry for 3 minutes until browned on all sides then set aside. In the same pan add the mange tout and sweet corn stir-fry for 1 minute then add the soya sauce mix and fry for 2 more minutes. Add the beef and stir-fry for 1 more minute. 5. Drain the noodles and serve with the chopped mint, coriander and crushed peanuts on top.
