200g raw king prawns 2 tsp smoked paprika 1 crushed garlic clove
2 tsp honey 125g lambs lettuce or baby spinach leaves 100g cherry tomatoes chopped in half 1 tsp whole grain mustard 3 tbsp olive oil
Serves 2 Takes 20 minutes
Method
In a bowl mix together the smoked paprika, 1 tsp honey, 2 tbsp of olive oil. Season with salt and pepper. Devein the prawns and add to marinade, leave for 5 minutes.
Make the dressing for the salad. Mix together the mustard, remaining honey and olive oil.
Put the lettuce in a bowl with the cherry tomatoes. Add the dressing and mix well.
Heat a large frying pan or grill pan. Add the marinaded king prawns and cook on a high heat for a couple of minutes on each side. Brush with the remaining marinade.
Serve on top of the salad
You can also add some slices of avocado and pumpkin seeds.
